01 - In a medium saucepan, combine sugar and water. Bring to a simmer over medium heat, stirring until sugar dissolves completely. Add orange slices in a single layer and simmer gently for 12 to 15 minutes, turning occasionally, until rinds become translucent. Carefully transfer orange slices to a parchment-lined tray and let cool completely, approximately 10 minutes.
02 - In a mixing bowl, combine Greek yogurt with honey, if using, and vanilla extract. Stir until smooth and well incorporated.
03 - Spoon a layer of prepared yogurt into the bottom of each parfait glass or jar. Add a layer of granola followed by several pieces of candied orange.
