Buffalo Chicken Caesar Grilled Cheese (Printable)

Bold grilled cheese sandwich combining spicy buffalo chicken, creamy Caesar dressing, melted cheese, and crispy bread.

# What You’ll Need:

→ Buffalo Chicken

01 - 2 cups cooked chicken breast, shredded
02 - 1/4 cup buffalo sauce, plus extra for drizzling
03 - 1 tablespoon unsalted butter, melted

→ Cheese

04 - 8 slices provolone or mozzarella cheese
05 - 1/2 cup grated Parmesan cheese

→ Caesar Layer

06 - 1/4 cup Caesar dressing
07 - 1 cup romaine lettuce, thinly shredded

→ Bread

08 - 8 slices sturdy country bread or sourdough
09 - 2 tablespoons unsalted butter, softened

# How To Make It:

01 - Toss shredded chicken with buffalo sauce and melted butter in a mixing bowl until evenly coated.
02 - Lay out bread slices and spread Caesar dressing evenly on one side of each slice.
03 - On four bread slices, layer provolone cheese, buffalo chicken mixture, shredded lettuce, and Parmesan cheese. Top each with another slice of provolone.
04 - Close each sandwich with remaining bread slices, Caesar dressing side facing inward. Spread softened butter on the outside of each bread slice.
05 - Heat large skillet or griddle over medium heat. Grill sandwiches for 3 to 4 minutes per side, pressing gently, until bread is golden brown and cheese is fully melted.
06 - Remove from heat, allow to cool slightly, slice diagonally, and serve immediately. Drizzle with additional buffalo sauce if desired.

# Expert Advice:

01 -
  • The way hot buffalo sauce meets cool creamy Caesar creates this incredible temperature contrast that hits different parts of your palate
  • Everything melty and crispy happens in one pan with zero cleanup beyond a spatula
02 -
  • Medium heat is your friend here. High heat burns the bread before the cheese inside has a chance to melt into that glorious state we all want
  • The Caesar dressing goes on the inside of the bread only. Butter goes outside. This mistake took me two sad sandwiches to figure out.
03 -
  • Use a cast iron skillet if you have one. The heavy, even heat creates the most uniform golden crust and presses everything together beautifully
  • Let the sandwiches rest for a full 60 seconds after grilling so the cheese redistributes instead of running out when you slice
